Hi... I have a few friends that work for a hotel.... I have known people working within this company for some time and it seems to be a common trend every couple of years for the company to do a special restructure where they remove some roles and create other positions with different titles but doing exactly the same as the previous title was doing. Some of the people get redundancy and some havent worked for the company long enough.
Is this even legal?

You haven't actually asked a question!
Broadly speaking, the employer has to prove that they are different jobs - if they are the same skills, job roles and responsibilities then this practice may constitute unfair dismissal for anyone who can make a claim.
Given this is a hotal then I am vaguely surprised that people get past one years service, never mind two. The sector are not known for their fine employment practices.
