Do I need to carry out the redundancy process myself, or can contract out? Does the redundancy process need to be carried out by an employee of the company, can we get a solicitor to carry out the redundancy consultation meetings to ensure that we don't make any mistakes?

No - they are your employees and you owe them better than contracting out consultation to an outsider who knows neither them nor the firm. And if the outsider makes mistakes - you are still legally liable. If you need help to make sure that you act in a fair and objective manner, hire "help". There are plenty of HR advising firms around.
